The gastronomy of Mallorca is the set of recipes and typical ingredients of Mallorca (Balearic Islands, Spain), a large island divided into three parts: the Tramontana mountain range, the Levante mountain range and the plain in between. Vegetable and cereal cultivation and pig farming in the interior is complemented by fishing on the coast. Slaughtering is very important on the island, as it allows all the pork to be used in a variety of sausages and, of course, in the ensaimada. The island has a great baking and pastry-making tradition. Dating back to the 14th century, it is one of the oldest guilds in the country and, in fact, many of its ovens are more than 200 years old.
The island enjoys an ideal location and climate for an extensive wine production of red, white and rosé wines. There are also numerous wineries on the island that specialise in organic production, i.e. they respect the environment and are concerned with the conservation of the Mallorcan soil during the process of making and bottling their wines. These and other Mallorcan wines have often been awarded important international prizes of great importance, which highlights the quality of the island's production.
