Characteristics:
Manual harvesting in 20 kg crates. Selection table. Maceration with skins and fermentation for 21 days at 28ºC.
Ageing:
12 months in cask and 12 months in bottle.
Colour:
Bigarreau cherry red with purple glints indicating youth.
Nose:
High aromatic intensity, with aromas of ripe fruit well blended with the wood which contributes aromas of special sweetness and pleasant toasted notes.
Palate:
Enveloping and tasty, balanced, with finesse and pleasant maturity. Finish with hints of ripe fruit.
Serving temperature:
15- 18ºC.
Food pairing:
Red meat, cold meats, game birds, small game, meat stews and light casseroles, semi-cured cheeses.
